Watermelon deserves more praise. Not only is this juicy fruit the official symbol of summertime BBQs and sunny skies, it’s also high in vitamin C, potassium and the cancer-busting lycopene.
We like to blend into a refreshing recovery drink, like the ORbike Watermelon Recovery Smoothie.
This recipe is best made with frozen watermelon. Plan ahead: next time you buy a watermelon, cube up half of it and put it in the freezer. Freeze the watermelon on a baking pan first then transfer to a sealed container to avoid the cubes sticking together.
1 cup high-protein plain Greek yogurt (we recommend Chobani 0% fat)
1/4 cup coconut water (with an extra 1/2 cup reserved)
1 cup watermelon, cubed and frozen
1/2 cup cherries, pitted and not frozen
Add all ingredients to a high-powered blender and blend until smooth. Add extra coconut water as needed until desired consistency is achieved.
Enjoy in a chilled pint glass with a fat straw while you kick back on the porch.
